Bergamo's coarse cornmeal is obtained by grinding vitreous or semi-vitreous corn kernels at a rather coarse granule size, which is why it has a rough texture even in the mouth. It has an intense golden yellow color with some lighter streaks and orange reflections, sometimes reddish. It has the aroma of well-baked bread crust.
