With the considerable successes achieved, recognition and appreciation from an increasingly qualified clientele, Lavialattea underwent a transformation in 2002, transitioning from an Agricultural Company to an Artisanal one: the livestock was sold and milk sourced from various partners who, thanks to knowledge acquired in the field, receive technical support as well. Caseificio LaViaLattea is today a small family-run artisanal cheese dairy that produces raw milk goat cheese without preservatives and thickening agents. Over 100 different cheese varieties are produced, born from the creativity of cheesemakers who adapt production daily according to the type of milk, to enhance specific characteristics.
