The company seasons and refines cheeses from the Val Taleggio tradition in particular and from the Lombardy region in general. The aging cellars are underground, built entirely in concrete. During the aging process, pine wood crates and boards and cotton cloths are used; processing is done in an artisanal manner, entirely by hand. Today, the company exports more than half of its production; its sales channels are primarily high-quality delicatessens and restaurants worldwide.
