In a spectacular panorama at 1800 meters altitude, Alfio's herd, almost 100 head, of which 60 in lactation, spends the entire summer: from early June to late September. This pristine territory allows the animals to feed on the best fresh grass and to produce quality milk, which is transformed into delicious cheeses. Even in the winter months, when they return to the valley, the cows are fed only with hay from these lands, without resorting to industrial feed. The jewel of Alfio's production is the Formai de Mut DOP, mountain cheese: once these wheels were used to pay the rent for the pastures.
